Port Light

  • 2 oz Bourbon

  • 1 oz Lemon Juice

  • .5 oz Passion Fruit Syrup

  • 1+ tsp Grenadine

  • 1 Small Egg White

    Dry shake all ingredients without ice to froth. Add ice and shake. Pour full contents into Port Light mug or tall Tiki Mug.

  • Garnish: Mint Sprig and Bright Red Cherry on a skewer.

Zombie

  • 1.5 oz Dark Jamaica Rum

  • 1.5 Gold Puerto Rico Rum

  • 1 oz Overproof Dark Rum

  • .75 oz Lime Juice

  • .5 oz Falernum

  • .5 oz Don’s Mix

  • 1 tsp Grenadine

  • 2 dashes Angostura Bitters

  • 6 Drops Pernod

  • 1 Cup Crushed Ice

    Blend all ingredients in blender, pour into Zombie glass or tall Tiki Mug.

  • Garnish: Float 1 half lime shell upside down in glass, pour some overproof rum into shell and light aflame.

  • Don’s Mix: 2 part Grapefruit Juice + 1 part Cinnamon Syrup

Mai Tai

  • 2 oz Medium Bodied Jamaican Rum

  • 1 oz Lime Juice

  • .5 oz Orange Curacao

  • .25 oz Orgeat Syrup

  • .25 oz Simple Syrup

    Shake all ingredients with small broken ice. (Crushed ice dilutes the drink too quickly.)

    Double Rocks Glass, Short Tiki Mug

    Garnish: Expressed mint sprig, 1/2 Lime Shell

  • Notes: The 2 oz of rum can be divided into a blend of 2 rums, but should always include some type of Jamaican. Dark Jamaican/Rhum Agricole Vieux, or Black Jamaican/Barbados are popular combinations.
